Allergy free honey carrot muffins recipe



Ingredients
  • 2 cups Orgran self-raising flour
  • cup Orgran plain flour
  • ½ tsp mixed spice
  • ½ cup firmly packed brown sugar
  • 2 cups finely grated carrot
  • ¼ cup honey
  • 2 tsp Orgran No Egg whisked with 60mls water until thick
  • 1 cup goat’s milk
  • cup olive oil


Method
  • Preheat oven to 180°C.
  • Line a muffin pan with patties.
  • Sift the flours and spice into a bowl.
  • Stir in the sugar and carrot.
  • Whisk the honey, No Egg mixture, goat’s milk and oil together in a bowl.
  • Add the honey mixture to the flour mixture.
  • Mix until just combined.
  • Spoon the muffin mixture into muffin holes until three-quarters full.
  • Bake for 25 minut
    es or until a skewer inserted in the centre of 1 muffin comes out clean.
  • Cool in pan for 2 minutes.
  • Turn out onto a wire rack to cool completely.
