Allergy free warm broccoli salad with goat’s cheese dressing recipe



Ingredients
  • ½ cup crumbled plain goat’s cheese
  • ½ cup goat’s milk
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp pepper
  • 1 broccoli, trimmed and finely chopped
  • ¼ of a cauliflower, trimmed and finely chopped
  • ½ red capsicum, chopped
  • Handful of snow peas, chopped

Method
  • Beat the cheese, milk, lemon juice, garlic and pepper in a large bowl until smooth.
  • Steam the broccoli and cauliflower for 4 minutes.
  • Add the capsicum and snow peas and steam for one more minute.
  • Add the broccoli, cauliflower, snow peas and capsicum to the salad dressing.
  • Toss to coat and allow the steamed vegetables to warm the salad dressing.
  • Can be eaten warm or chilled.

Note
  • If garlic is an issue then just leave it out.
