Rose and lime Turkish delight recipe (no sugar thermometer needed)


Ingredients
  • Olive oil spray
  • 4 cups caster sugar
  • 4 cups water
  • 2-4 tbs fresh lime juice (1 -2 large limes)
  • 3 tbs gelatine powder
  • 3/4 cup cornflour
  • 1 tsp cream of tartar
  • 2-3 tsp rosewater essence (to taste)
  • ½ tsp lime essence (optional)
  • 3-4 drops red or green food colouring
  • 2 cups icing sugar mixture



Method
  • Spray a square 20cm cake pan with olive oil spray to grease.
  • Line the base and side with non-stick baking paper, allowing the sides to overhang.
  • Place the sugar and 1/2 of the water in a large heavy-based saucepan over low heat and stir until the sugar dissolves.
  • Increase heat to medium.
  • Cook, without stirring, brushing down the side of the occasionally saucepan with a pastry brush dipped in water, for 25 minutes at a high boil.
  • Stir in the lime juice.
  • Meanwhile, place the gelatine, cornflour and cream of tartar in a large saucepan.
  • Use a balloon whisk to whisk in a little of the remaining water to form a paste. Gradually whisk in the remaining water.
  • While whisking, place over medium heat and cook for until the mixture boils and thickens, turning to semi-clear glue (approximately 3-5 minutes.)
  • Gradually pour the sugar syrup into the cornflour mixture, whisking constantly. If the mixture becomes lumpy then pour it through a fine sieve into another saucepan (If using a whisk the chances of this happening are reduced).
  • Reduce the heat to low and allow the mix to bubble mildly.
  • Simmer, whisking occasionally to prevent the mixture sticking to the base of the pan, for 1 hour or until the mixture is light golden.
  • If the scent of lime is too light then add the lime essence and whisk to combine.
  • Add the rosewater and a few drops of the food colouring and whisk until well combined.
  • Pour the mixture into the prepared pan.
  • Set aside to cool to room temperature and place in the fridge for 4 hours or overnight until firm.
  • Pour the icing sugar mixture onto a large chopping board.
  • Turn the set Turkish delight onto the icing sugar and use a lightly greased knife to cut into 3cm pieces.
  • Toss the Turkish delight in the icing sugar to coat.

Notes
  • Pots and pans in use must be very clean (no burn stains that might be removed by hot temperature cooking).
  • Work fast whenever you are combining mixes or when the cornflour mixture thickens to glue.
  • In this, you are basically dealing with flavoured and sugared glue. That might not sound appealing but have you ever heard the list of ingredients for sausage. The advantage of this is that any flavour can be applied.

Allergy free lime cheesecake goat’s milk ice cream recipe

Just a little more freezing to go...
Initial taste testing says: this is awesome.

Ingredients
  • 3 cups long life goat’s milk
  • 1 cup sugar
  • 200g plain soft goat’s cheese, crumbled
  • 3 tablespoons glucose
  • 5 tsp Orgran No Egg
  • 1 tsp gelatine
  • 4 limes, pulp-free juice and finely grated rind

Method
  • Add crumbled goat’s cheese, sugar and 1 cup goat’s milk to bowl, mix until smooth.
  • Add remaining milk and, glucose and gelatine then mix until smooth.
  • Add Orgran No Egg and mix until combined. Mixture should thicken somewhat.
  • Add lime juice and rind and then mix until smooth.
  • Pour into freezing bowl/dish and place in freezer.
  • Fold or whisk every 15 minutes until near frozen to break up any large crystals.
  • Pour or spoon into storage containers to freeze.

Notes
  • Will taste like lime cheesecake as goat's milk has a stronger flavour than cow's milk.
  • For a milder cheesecake flavour add less goat’s cheese and more milk and thickening agents (No Egg, gelatine or whatever you choose).

Allergy free key lime pie recipe

I'm so happy! I have a long history of making cheesecake messes at the bottom of the oven.
Same with slices. Yet here is not only a perfectly edible but hard to resist key lime pie. 
Now, how long can I wait before sneaking a slice...

Ingredients
  • 200g Orgran biscuits of your choice
  • 1 tbs caster sugar
  • 100g Nuttlex, melted
  • 4 tsp Orgran No Eggs, whisked with 120mls water until thick
  • 395gms condensed goat’s milk (you may need to make this)
  • 2/3 cup half and half goat’s milk and plain soft goat’s cheese, beaten
  • Finely grated rind and juice of 4 limes
  • 3 tsp powdered gelatine

Method
  • Preheat oven to 170°C.
  • Line base of a 20cm spring-form tin with baking paper.
  • In a bowl, crush and beat biscuits until fine crumbs (or process).
  • Add sugar and Nuttlex and beat until evenly combined.
  • Press mixture firmly into the base and 3cm up sides of tin.
  • Refrigerate.
  • If needed, prepare condensed goat's milk (see previous recipe).
  • In a large bowl, beat goat’s milk and soft goat’s cheese together to form the half and half.
  • In a small bowl whisk together the Orgran No Egg and water until thick.
  • Whisk together Orgran No Egg mixture, condensed goat’s milk, half and half, gelatine, lime rind and lime juice until smooth.
  • Pour into biscuit crust.
  • Place on tray and bake for 40-45 mins or until set.
  • Cool.

Allergy free lime and rosewater cordial recipe


Ingredients
  • 3 cups water
  • 1 ½ cup sugar
  • 1 ½ tsp citric acid
  • 1 tsp tartaric acid
  • Juice of 10 limes
  • 3 tsp natural rosewater (or to taste)
  • Rind of 4 limes, pith removed and cut into pieces

Method
  • In a small bowl, stir acids and sugar together.
  • In a large pot, bring water to a boil then add the sugar mixture.
  • Stir constantly until the sugar is dissolved.
  • Turn off the heat.
  • Add juice and rosewater as well as the cut rind and stir mixture well.
  • Turn the heat back on.
  • Allow to simmer for 1-2 minutes.
  • Remove from heat, cover and allow to cool.
  • Strain the lime rinds and pour into an empty, sterilised bottle with tight-fitting lid.
  • Refrigerate.

Note
  • This doesn't make a lot of cordial so a medium sized bottle will likely do. 
  • Be sure to sterilise the bottle. Boil water in the bottle for 6-8 minutes in the microwave.
