Looks nicer with rice but when the husband is away rice isn't cooked. Technically rice is a cheat for me so I limit myself to rice flour and the very, very occasional laksa noodle (once in 3 years in very, very occasional and I do miss being able to have laksa more often). Anyway, this tastes wonderful and was a favourite of mine while growing up. I argue with the husband about the sultana addition every time I use this curry powder but when the husband is away... :)
Ingredients
- 3 tbsps Nuttlex
- 1 small onion, chopped
- 2-3 apples, peeled, cored and finely chopped
- 3 tbsps Orgran all purpose flour
- 1 tbsp curry powder
- 700g chicken breast, chopped to same size as the apple
- 1 ½ cup hot chicken stock made from half a Massel vegetarian chicken ultracube
- ½ cup goat’s milk
- Handful sultanas (optional)
- Salt and pepper to taste
Method
- In a large saucepan over a medium-high heat saute the apple and onion in Nuttlex until tender.
- Add the curry powder and saute for 1 minute more.
- Add the flour and continue to cook another minute.
- Add the sultanas, stock and milk and stir well to combine.
- Add the chicken to the sauce.
- Season to taste
- Bring to the boil then reduce the heat and simmer until the chicken is cooked through and the sauce has thickened.
