Ingredients
- 3 cups water
- 1 ½ cup sugar
- 1 ½ tsp citric acid
- 1 tsp tartaric acid
- Juice of 10 limes
- 3 tsp natural rosewater (or to taste)
- Rind of 4 limes, pith removed and cut into pieces
Method
- In a small bowl, stir acids and sugar together.
- In a large pot, bring water to a boil then add the sugar mixture.
- Stir constantly until the sugar is dissolved.
- Turn off the heat.
- Add juice and rosewater as well as the cut rind and stir mixture well.
- Turn the heat back on.
- Allow to simmer for 1-2 minutes.
- Remove from heat, cover and allow to cool.
- Strain the lime rinds and pour into an empty, sterilised bottle with tight-fitting lid.
- Refrigerate.
Note
- This doesn't make a lot of cordial so a medium sized bottle will likely do.
- Be sure to sterilise the bottle. Boil water in the bottle for 6-8 minutes in the microwave.
