- ½ cup crumbled plain goat’s cheese
- ½ cup goat’s milk
- 1 tbsp lemon juice
- 1 clove garlic, minced
- ¼ tsp pepper
- 1 broccoli, trimmed and finely chopped
- ¼ of a cauliflower, trimmed and finely chopped
- ½ red capsicum, chopped
- Handful of snow peas, chopped
Method
- Beat the cheese, milk, lemon juice, garlic and pepper in a large bowl until smooth.
- Steam the broccoli and cauliflower for 4 minutes.
- Add the capsicum and snow peas and steam for one more minute.
- Add the broccoli, cauliflower, snow peas and capsicum to the salad dressing.
- Toss to coat and allow the steamed vegetables to warm the salad dressing.
- Can be eaten warm or chilled.
Note
- If garlic is an issue then just leave it out.
